Soils: Black loam over limestone
Winemaking: Hand-picked, basket pressed in whole bunches, malolactic fermentation in barrel. Aged for 18 months in10% Grande Reserve American Oak and 90% Grande Reserve French Oak used with the new oak component being 35% with 2, 3 and 4 year old oak barriques.
Tasting Comments: The great Australian iconic wine style is back - we took what we learnt from our first foray into this style the 2017 vintage and amped it “up to eleven” (Nigel Tufnel Spinal Tap 1984). This wine exhibits fine beads with a sherbet like persistent mousse. The bubbles highlight the aromatic characters of bright fruits, blackcurrant, redolent with plums, raspberry coulis, with a hint of vanilla complexity and sweet spice. The finish is firm without being too dry or too sweet. The tasting of this wine was at 10am with bacon and eggs - the breakfast of champions. Serve well chilled.
