Torpedo Rocks Cabernet Sauvignon 2021
Winemaking: From our north facing slopes high on the valley side of the property, this fruit captures the full sunlight and cool maritime breezes. Low yielding cropping levels to ensure maximum sugar and flavour ratio. Hand-picked, basket pressed with fermentation in open vats to ensure gentle tannin extraction. Barrel aged for 19 months in 100% Grande Reserve French Oak barriques with the new oak component being 35% with 2, 3 and 4 year oak old barriques.
Tasting Comments: - This wine is like your best friend from school - in your face and ready to party. Very fruit driven on all levels, the nose is full with the entire black berry family, dusty oak, hints of medicinal herbaceousness, violets and underneath the earthy tones of typical Margaret River Cabernet. The palate is “chock-a-block” with a clean black juicy fruits, chocolate bean, custard tarts with blueberries on top and firm tannins. This is a wine that is the last to leave the above mentioned party, just keeps on going when everyone is asleep.
