Soils: Black loam over limestone
Winemaking: Hand-picked, basket pressed in whole bunches, malolactic fermentation in barrel. Aged for 19 months in10% Grande Reserve American Oak and 90% Grande Reserve French Oak used with the new oak component being 35% with 2, 3 and 4 year old oak barriques.
Minimal intervention when bottled.
Tasting Comments: | The colour of this wine reminds me of a night sky in the Arctic Circle (obviously in winter), dark purple with hints of deep lilac towards the edges. The nose is packed with dark berry fruits, baked plums, dollops of raspberry jam, liquorice and hints of the charcuterie platter you are about to devour whilst drinking this wine. Being unfiltered, the sweet fruits explode in your mouth with almost a tactile quality. It wouldn’t be a Shiraz without the secondary notes of white pepper, baking spices and the constant burnt toffee sugar from the small amount of American oak. Full bodied, well-balanced tannins with a chompy/crunchy finish.
