    Black sandy loam over limestone

    Winemaking:
    The grapes are left on the vine to raison, producing a concentration of flavours by having a higher sugar content. Each year’s vintage is added to old oak hogsheads. This gives the wine a mid reddish brown amber hues and a subtle smokey chara Fermentation is stopped by the addition of a cognac spirit.

    Cellaring:
    Fully matured when released, but will cellar for years.


    Tasting Comments:
    This is what you get when you juice a Christmas pudding, some fruit mince pies prunes. The palate is syrupy and luxurious long finish of raisons and toffee. Fantastic after dinner or drown over ice-cream or pancakes.
